Baked Avocado and Egg

Avocados are pretty cheap to get hold of, especially when you bag one for 21p on the reduced aisle, but I’ve never cooked one before. So, I thought I’d try something simple. This recipe takes 15minutes to cook and I’ll definitely be making it again. Maybe with some fresh chives next time?

I used a fairly small avocado, so I didn’t use much egg white. You could either use a large avocado or scoop out a little of the flesh around the stone hole to fit more egg white in!

Serves: 1

Cooking time: 15 mins


1 avocado

2 small eggs

1 slice bacon, cooked and chopped

Salt and pepper

Herbs of your choice. Fresh or dried parsley would work well. I used mixed herbs as that was what I had in the cupboard!

Toast to serve


Cut the avocado in half and remove the stone. Using a knife take a little of the skin off the bottom of each half so that they rest in a baking tray without toppling.

Crack the eggs into a bowl and use a spoon to scoop the yolk into the groove left by the avocado stone.

Spoon a little egg white over the yolk until the hole is filled.

Season to taste with salt, pepper and your choice of herbs.

Bake on 200°c for 15-18 minutes.

Serve with toast and a sprinkle of cooked bacon.
